Following this discussion, we will have a mak (sliced) kimchi-making demonstration, based on my mother’s original recipe with my personal touches. You'll be actively participating by making your own batch, so plan on getting your hands wet!  The dinner we'll be feasting on at the end of this course is Tofu Kimchi stew and fresh steamed rice.

BYOB: Students are encouraged to bring wine to share with the group.

With the Lunar New Year’s Day approaching, we'll try our hand at making ceremonial food to celebrate this important occasion. With majority of the population rooted in Buddhism, New Year’s Day is a time of reflection and giving thanks to our ancestors for watching over us. I grew up watching my aunts pan-fry hundreds of Juns (fritters) in preparation for the big ceremony, the most common ones being made from fish filet (which we will be making in this class), peppers, or beef. Food of New Year's Day

In this class, we will be celebrating the New Year! You will make your own mandu (stuffed pork dumplings) and we will add them to our Duk Guk, a beef broth soup with sliced rice patties and the dumplings. The dumplings are often stuffed with old kimchi to represent “out with the old” and the white outer layer of the dumplings represent “in with the new.” Traditionally, this is the first meal Koreans eat on New Year’s Day to mark the beginning of a fresh, new start.

DIY Pokee Kimchi & Black Fernbrakes (banchan)

This is a time of the year when food is gathered and stored for the winter season. We'll try our hand at making poki kimchi and garlic sautéed kosari (Black Fernbrakes is rehydrated fiddle heads). Traditionally, making poki kimchi is a big neighborhood affair. All the neighbors come together to make a huge batch and split the kimchi amongst themselves. My mother has been known to make 500 lbs of kimchi at a time! The Fernbrakes' garlicky and nutty flavor is a nice balance to the spicy banchan. We'll add our batch to the bibimbop, a signature Korean mixed rice.

To kick off this four class series, we'll discuss the principles of the table setting of a traditional Korean meal. Everything served, from the banchan (side dishes) and the main dish, has a rhythm and purpose where it is placed. Following this discussion, we will have a mak (sliced) kimchi-making demonstration, based on my mother’s original recipe with my personal touches. You'll be actively participating in the demonstration, so plan on getting your hands wet! Finally, we'll feast on kimchi stew dinner. You may want to bring an apron to protect your clothing. Please bring a quart sized glass jar to take home your own kimchi.
